Taco dip

Happy Independence Day! I love the 4th of July and have some great memories on the lake growing up! Wanted to share a recipes I brought to both our family's events this weekend....

Taco dip...
1 8oz block cream cheese
1 8 oz sour cream
16oz mild salsa
1 tablespoon taco seasoning
Bunch of cilantro, chopped
2 cups chopped lettuce
1 chopped tomato
2 oz can chopped olives
1 can of blk beans or refried beans..or both!
2 cups shredded cheddar

Soften cream cheese in bowl for about 1 min in microwave. Mix in sour cream, salsa, taco seasoning and whip together till completely blended.
Cover the base of a shallow glass or porcelain dish with beans. Layer salsa mixture over top and spread evenly. Top with cilantro, lettuce, tomatoes, olives and then cheese!
Chill for at least 1 hour or make the night before. Serve with chips or mini tortillas.

Banana walnut muffins

Even work for the non bakers like me!


2 rope bananas
4 tablespoons honey
1/2 cup milk
1 lg egg
1 table spoon veg oil
 1/2 walnuts
1/4 baking soda
1/4 salt
2 1/2 teaspoons baking powder
3/4 cup rolled oats
1 cup whole wheat flour
1/2 cup while chocolate chips, optional

Peal and mash bananas in bowl. Add following 4 ingredients to bananas.
In another bowl add walnuts, baking soda, powder, oats, flour and chips. Finally slowly add dry mixture to first bowl and stir till fully mixed. Spoon into greased muffin cups.
Bake @400 for 20-22 mins.

The boys loved these and they are delicious for weekday breakfasts!

Fish taco nachos with Baja sauce

Walking through the grocery store today some fish spoke to me...haha not really but the box did. It was breaded fish that is "perfect for tacos". Honesty I feel I've been in a recipe rut lately but have been seeing fish tacos on my fav Pinterest...so I was sure that I could find something once I came home!

10 pieces of fish
1/2 cabbage, chopped
Handful of cilantro, chopped
1 lime, sliced

White corn salsa:
1 can or 2 cups frozen white corn
1 can blk beans, rinsed
3 tbs olive oil
Lime juice
Handful if cilantro, chopped
Salt/pepper to taste

Baja sauce:
1/2 cup mayo
1/2 sour cream
1 TB taco seasoning
1/2 lime, juiced

Bake fish @450 25 mins per pkg. Chop cabbage and cilantro, then toss in juice from 1/2 your lime in a med bowl. Combine sauce ingredients and chill while fish bakes. Finally plate with tortilla chips, cabbage mixture, salsa, fish and top with sauce. Enjoy!

Orzo chicken and spinach soup

Found this recipe on Pinterest and had planned on making it this week anyway...but then it happen, I got sick! yuck I hate being sick!!! I've fought through work last night and it only got worse...so I made this today to help me feel better!

2-3 chicken breasts, cooked and cubed
1 can if diced tomatoes
8 cups water
Scoop of better than bullion
2 cups chopped carrots
1 cup chopped celery
1/2 diced onion
1 cup sliced mushrooms
4-6 cups spinach
8 oz orzo
 4 tbl olive oil
 garlic salt and pepper to taste

In a large stockpile to warm olive oil on medium heat. Sauté onion, mushrooms, celery and carrots till tender. Add bullion, water and tomatoes. Bring to boil, reduce heat and simmer for 20 mins. Finally add spinach and orzo till orzo is fully cooked. Serve with bread or salad.

I'm already feeling better!

Xmas wraps

Thank you again Pinterest,
I made these for my app party this weekend and they were a huge hit!

1 block cream cheese, softened.
1/2-1 cup feta
1 cup dried cranberries
4 green onions, chopped
4 tortillas, I used tomato and basil

Soften cream cheese in bowl. Add feta, cranberries, onions and mix till blended. Spoon evenly on all tortilla and spread. Finally roll, chill for at least 1 hour, slice into 1 inch rolls and serve.
 Enjoy!

Crock pot potato soup

Pinterest again my friends.....
And this is a great recipe with a couple tweaks....

15oz frozen potatoes
3 fresh potatoes, shredded
4 cups chicken broth
2 cups water
1 can cream of chicken soup
1/2 onion, chopped
cracked pepper and salt to taste
1/2 pkg cream cheese

Put all ingredients into crock pot but cream cheese. Cook on low 6 hours, stir in cream cheese and warm till melted. Serve with green onions, cheese and bacon!

Roasted Kilbasa and potatoes

6 red potatoes, cut to quarters
2 sweet potatoes, sliced and quartered
1 med yellow onion
4-6 lrg links of kilbasa
2 honey crisp apples, sliced
2 tbl honey
Salt and pepper to taste
6 tbl olive oil

Warm, cut and quarter potatoes and onion. Set in foil lined pan and coat with olive oil. Top with salt, pepper and toss. Bake at 450 for 40 mins or until vegetables tender. Spoon honey over and mix. Top with apples, kilbasa and bake for another 20 mins.
Let cool, serve and enjoy!
