This week was my birthday....yup 31 my friends!
I don't feel a day over 26 so on to cooking....
Had some family over and served up some soup!
2 cups roasted chicken
2 cups celery, chopped
2 cups carrots, chopped
1 cup onion, chopped
1/2 tb minced garlic
Dash salt and pepper
Bunch of fresh parsley, chopped
4 cups chicken broth
2 cups water
About 4 cups egg noodles...I just throw in some handfuls
Coat lrg stock pot with olive oil and heat to medium/high heat. Add onion, carrots and celery. sauté till veggies are tender, about 10 mins while gradually adding chicken broth. Add water, chicken,garlic, salt and pepper. Bring to boil and turn heat down to simmer for about 45 mins.
Cook noodles in another pot per pkg directions and salt to taste. Finally add noodles and serve!
