Beef & Bean Enchiladas

AAAwwww Spring is here.... well for now I think I heard something about snow this weekend! After a walk with the Hubby & pup this is what we had for dinner!
-1 lb ground beef
-1 can re fried beans
-1 large can enchilada sauce
- 1/2 onion chopped
- 1 cup peppers: red, yellow or green... your choice
-5 tortillas
- 2 cups cheese shredded
Saute onion and peppers till tender. Set aside and brown beef, drain and then add pepper/onion back. Pour about 1/2 cup sauce and cheese into skillet. Mix till blended and cheese is melted.
Pour 1/2 cup sauce into bottom of a 8x8 baking dish. Dip tortillas into sauce and lay flat in dish one at a time, spoon beans on and spread evenly. Spoon in beef and roll into tube. Repeat and finally cover with remaining sauce and cheese. Bake @ 375 for about 20 mins till warm.
