Pasta with mom....

HAPPY ST. PATTYS DAY.... We enjoyed cornbeef & cabbage last night @ our Lioness Group dinner. We a great turnout and heard from a speaker, Karen from our local battered women shelter, Alexandra House. It was both sad and interesting to hear the stories she shared with us. But in addition to donations made by our club this christmas we were so thankful to give ALL of our raffle $$$ from last night to the shelter!
Day off today and after running some errands, my mom came over to enjoy the wonderful weather with a long walk! Then we chatted for hours while I cooked and we ate pasta... it was a good girls night & to cap it off we hung out with my dad for a while when he picked her up... I LOVE my family! :)

Chicken Piccata & Stroganoff:
Linguine pasta (about 1/2 a box)
Red pepper chopped
1/4 cup red onion
2 tbs olive oil
1 can of cream of chicken soup
1 cup sour cream
1 tsp salt/pepper
1/2 shredded Parmesan cheese

Cook pasta per directions. Warm skillet on med heat and cook onions and peppers till tender. Add soup, sour cream mix, salt, pepper, cheese and warm till bubbling. Drain noodles, pour into sauce mixture and toss until covered. Sprinkle top with paprika and Parmesan cheese and serve with chicken!
