To be honest the Hubby and I saw this on a tv commercial a couple days again...haha!

1/2 cup celery
Olive oil
1 can tomato soup
2 tb welch shire sauce
2 tb vinegar
1/4 cup ketchup or minced fresh tomatoes
2 tb brown sugar
2 cups shredded cheese, any kind we used Cheddar

Meatball Sandy
What does my hubby like?? Sandwiches & meat... (sounds like Joey on friends, haha I LOVE that show) Either way I dont know why I didnt think about it before but last Sunday I made meatball sandwiches!
-meatballs
-pasta sauce
-mozzarella cheese
-sandwich rolls (I bought mine fresh from the bakery & made them same day...they were so fresh, yum!)
You can use frozen or homemade meatballs... the extra time to make them is worth the taste, but busy weekdays call for short cuts sometimes!
My meatball recipe:
1 lb ground beef or turkey
1 cup panko
1 egg beaten
1/4 chopped onion
1/4 cup pasta sauce
1 tsp minced garlic
*Mix all together, form into 1 inch ball and bake for 30 mins @ 350.
Place meatballs in a lrg stock pot and cover them completly with pasta sauce. If you are using frozen meatballs, place them frozen into the pot and heat till warm. If you are using homemade ones, put them into the pot after baking them.

Cover your meatballs with sauce and gently stir. Heat them on low-medium, stirring occasionally, until the meatballs are heated thoroughly.
Cover a cookie sheet with tin foil for easy clean up. Cut each roll 1/2 way through and line sheet. Fill with 4-5 meatballs, pour sauce over and top with cheese!!
Bake in an oven at 400 degrees until cheese is melted. These are SO good for a quick weeknight dinner because you can make/bake meatball ahead of time. Also would be fun for the up coming Super Bowl...just make and wrap in foil to keep warm if traveling.

Ribbon Meatloaf
1 pound ground beef
1 tablespoon of minced onion
1 tablespoon minced garlic
1 1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup self-rising flour (No self-rising? mix 1/3 cup reg flour & 1/2 teaspoon baking powder and pinch of salt)
2 cups canned tomatoes, drained and juices reserved
1 3/4 cup peas, frozen or fresh
1 roll refrigerated seamless croissants
Combine the beef, onion, salt, pepper in a large skillet and cook over medium heat until the meat is browned, 12-15 mins. Removed from heat. Stir in the flour and 1/3 cup of the reserved tomato liquid. Remove 1 cup of this meat mixture and set aside.
Preheat oven to 450.
On a well-floured surface, roll dough into a large rectangle. Spread the reserved cup of meat mixture thinly over dough and then roll like a jelly roll from one side. Place on a greased baking sheet. Using a kitchen knife, cut 1 inch slices almost through to the bottom of the roll. To expose some of the filling, pull alternating slices to the left and right. Bake for 10-15 mins or till brown.
Reheat the beef with added in peas and tomatoes. Slice loaf and spoon of the hot veg/meat mixture over each slice.

Banana & steak Kabobs?
Talking to my mom last week she had heard on our fav radio station (My Talk FM 107.1) about adding bananas to kabobs. So tonight I thought we would add some to ours:

I marinated the steak:
1/4 cup olive oil
1/4 cup soy sauce
1 tsp minced garlic
Chopped green onions
*Then sliced up some mushrooms, onion, zucchini, green pepper and bananas.
The bananas caramelize and taste amazing.... we are thinking of doing some only fruit ones next time with apples, pineapples and bananas!

French dips... a quick meal
Hey there...
Working late tonight and there is SO much work to do at the store this week.... might have not been the best week for my full time manager to go on vac! (but we all need a vac right??) Anyway here is a easy/quick recipe that can go in to crock for the Hubby while I'm @ work 2night.....
French Dip Sandwiches
1 can beef broth (about 2 cups)
1 pkg Lipton beef onion mix
1 lb of thinly cut roast beef
1/2 cup green pepper
1/2 cup red pepper
2 stalks of green onions. chopped
4-6 slices of cheese of your choice, I use Swiss
4-6 onion or sesame buns
Pour broth and onion mix into crock pot and mix. Chop veggies, drop veggies and meat into crock also. Simmer on low for 4 hours and serve on buns with cheese. If you don't want to make in advance just put in pot and simmer on low for 20 mins.
*Baby update* So tomorrow I have my 28 week appoint. so I will post how that goes.... I will be taking my glucose test, so good thing I have some "homework" to do for this weekend's holiday transition @ work. It can take the hour+ in the waiting room and be productive! Either way I'm interested to see where I'm at with weight and how this baby is doing in there! :)
