Summer is slipping away... but it is also giving us some wonderful things from the garden to cook with!
Balsamic vinegar tomatoes and feta
slice 3-4 fresh tomatoes (I use both yellow and red from the garden)
slice pitted blk olives (3/4 can)
1 bunch green onions
2-3 basil leaves, chopped
1/2 feta or goat cheese
Dressing:
1/4 cup balsamic vinegar
1/2 olive oil
1 pkg dry Italian dressing mix
Mix vinegar, oil and mix together. Pour over tomatoes, olives, basil and onions. Let chill for 1/2 hour. Finish with sprinkling of cheese and serve.

Your tomatoes look good! I wish I planted some this year. I had my first cucumber from the garden tonight and it was yummy!

ReplyDeletePretty well. We had green beans for awhile, but now they have been taken over by some bugs so we're working on getting rid of them. Butternut squash are getting big, so they should be ready in a few weeks and I'm super excited for that! My peppers never grew, so that's kinda sad, but I'm gonna try again next year. Joe's pumpkin is well on it's way to being a giant one, so he's excited!
