Mexican stuffed shells

Hey there,
I'm back into cooking mode and really enjoying some new recipes this week...

1 lb ground beef, cooked
8-10 jumbo shells, cooked per directions
2 TB taco seasoning
1 red pepper, chopped
1/2 small onion, chopped
3 green onions, chopped
4 oz cream cheese
1 cup cheddar cheese
Soup can size enchilada sauce (I used green chili sauce this time)

Boil shells to pkg directions. 
Saute pepper and onion in olive oil on med to high heat. Set aside in bowl, cook beef and drain. Reduced heat to med/low and simmer taco seasoning, beef, peppers, onion and cream cheese till melted. Set aside till cooled and then stuff shells with mixture. Coat a 8x8 baking pan with 1/2 the can of enchilada sauce and set stuffed shells in open side down. Finally drizzle rest of sauce on top, cover and bake at 350 for 30 mins. Uncover top with cheese, green onions and bake till cheese is melted. Serve with lettuce, avocado, tomatoes and sour cream.
