Meatball Sandy

What does my hubby like?? Sandwiches & meat... (sounds like Joey on friends, haha I LOVE that show) Either way I dont know why I didnt think about it before but last Sunday I made meatball sandwiches!
 
-meatballs
-pasta sauce
-mozzarella cheese
-sandwich rolls (I bought mine fresh from the bakery & made them same day...they were so fresh, yum!)

You can use frozen or homemade meatballs... the extra time to make them is worth the taste, but busy weekdays call for short cuts sometimes!
 My meatball recipe:
1 lb ground beef or turkey
1 cup panko
1 egg beaten
1/4 chopped onion
1/4 cup pasta sauce
1 tsp minced garlic
*Mix all together, form into 1 inch ball and bake for 30 mins @ 350.

Place meatballs in a lrg stock pot and cover them completly with pasta sauce. If you are using frozen meatballs, place them frozen into the pot and heat till warm. If you are using homemade ones, put them into the pot after baking them.
                               
Cover your meatballs with sauce  and gently stir. Heat them on low-medium, stirring occasionally, until the meatballs are heated thoroughly.
Cover a cookie sheet with tin foil for easy clean up. Cut each roll 1/2 way through and line sheet. Fill with 4-5 meatballs, pour sauce over and top with cheese!!
Bake in an oven at 400 degrees until cheese is melted. These are SO good for a quick weeknight dinner because you can make/bake meatball ahead of time. Also would be fun for the up coming Super Bowl...just make and wrap in foil to keep warm if traveling.
