After differnt soup recipes I wanted to try my own with some fresh summer ingredients!
Vegetable & Spinach Tortellini Soup:
2 cups carrots, chopped
2 cups celery, chopped
2 tomatoes, sliced
1 zucchini, chopped
1/4 med onion, chopped
4 cups fresh spinach
1 pkg refrigerated fresh spinach tortellini
2 Tb fresh chopped basil
2 tsp salt/pepper/garlic seasoning from grinder
1 can low sodium chicken broth
2 cups water
Warm olive oil in stock pot over medium heat. Add 1 cup water, carrots, celery, pepper, onion and basil. Simmer all for 15 mins or until vegetables are tender. Add rest of ingredients, bring to boil and then reduce to medium for 30 mins. Top with Parmesan cheese and serve with grilled rye bread with cheese.
