fettucini & panko chicken

Pasta is really one of my favorite things to cook, eat and serve! I like to try different ways of cooking it and here is what I'm trying tonight.....

4 Boneless chicken breasts
2 cups Panko breadcrumbs
1 egg
1/2 cup flour
2 tlbs olive oil
Lemon slices, optional

Pound chicken into thin pieces. Dip each side into flour, egg and then breadcrumbs. Warm sauce pan on med heat with olive oil. Drop chicken into pan and cook on each side for 2 mins. Top with lemon slices & bake for in glass dish for 15-20 @ 350, or until baked through.

Fettuccine sauce:
8oz cream cheese
3/4 cup Parmesan cheese
1/2 cup butter
1/2 cup milk
8 oz fettuccine noodles, cooked and drained. In warm sauce pan combine all other ingredients and stir till smooth. Toss noddles in and then top with chicken. *Pictures to come!!
