2 cups chicken, grilled
1 cup carrots, fresh and chopped
2 cup broccoli, fresh and chopped
2 cup mushrooms, fresh and chopped
1 red pepper, chopped
3 tbs olive oil
1/4 cup BBQ sauce
1/4 cup soy sauce
2 cups cooked rice
*Warm olive oil in med pan. Toss in all veggies and cook until tender. Top with BBQ and soy sauce. Add chicken and cook till warm. Serve with cooked rice and enjoy!
(one way I pre prep for weekly dinners is marinate 1-2 lbs chicken in olive oil & season salt. Then grill and cut into strips. We use this chicken also for salads all week! I am 4 weeks going strong of pre-made lunches and dinners. Ive mixed it up a bit with fruit and different veggatables depending whats on sale. Either way its a very cost effective, quick and healthy way for our family to get through the week!)
