Beef Enchiladas

Dinner tonight:
1 lb cooked ground beef
6 tortillas
1/4 cup onion, chopped
1/2 green or red pepper, chopped
1 lg can Enchilada sauce
1 cup shredded cheese
1 sm can black beans (optional)

Cook beef med pan and drain. Return to pan along with onion, pepper and cook until tender. Add 1/2 cup of cheese, beans and mix until cheese is melted. While cooking pour 1/4 can of enchiladas sauce into medium glass cooking pan. Dip each tortilla into sauce coating both sides, spoon on meat mixture and roll. Repeat with all tortillas. Finally top with rest of sauce and then layer of cheese. Bake for 20-25 mins @375. Serve with Spanish rice, chips and guacamole.
*The Hubby doesn't like beans so I added them to the bean mixture after rolling 3 tortillas without.

*Quick Recipe: Guacamole:
1 avocado, pealed, pitted and smashed
1 tbs sour cream
dash of chili pepper
squeeze of lime
Mixture together, chill and serve.
