Hey there.... what does anyone love more than summer?? Maybe summer food? For me its the grilling, bonfires, hosting parties and COOKING! After wraps last night... see yesterday's post... I was looking through the calender... the Hubby & I have much on our "plate" this summer....
charity walks (3!), a male only fishing trip, garage sale, hosting 2 parties, bathroom renovation, MY long awaited 10/10/10 birthday, NEW puppy and maybe an new addition to the family?? ;) I'm tired just thinking about it! But as always after prioritizing it all it sounds like tons of fun & I'm going to need some new recipes:
Mom picked up this Salad Luncheon recipe book @ an fellow St. Francis Lioness event last weekend: (don't you just love when people know your passion and think about you!? Thanks mom!) Antipasto (from Lioness T. Heichel)
16 oz pkg Cheddar cheese, cubed
16 oz pkg provolone cheese, cubed
16 oz pkg sliced mushrooms
1 lb hard salami, cubed
1/2 lb peperoni, cubed
6 oz can whole pitted ripe blk olives, drained
1 onion chopped
1 green pepper, chopped
1 jalapeno pepper, sliced
16 oz bottle Italian salad dressing
Toss together all ingredients in serving bowl. Cover and chill overnight. Makes 18 cups.
* I would add some cooked pasta... but I just LOVE pasta salad*
Garden Spaghetti Salad (from Lioness M. Baumann)
8 oz spaghetti noddles, cooked
1 Tbls olive oil
2 cups cooked frozen corn
2 cups cooked lima beans
2 medium tomatoes, peeled, seeded and chopped
3/4 cup thinly slices green olives
1/2 cup minced fresh parsley
6 bacon strips, cooked and crumbled
Mix above
Dressing:
1/3 cup olive oil
3 Tbsp cider or red wine vinegar
2 Tbsp lemon juice
1 tsp sugar
1 tsp salt
1/2 tsp paprika
Dash pepper
*Add dressing and top with remainder of bacon.
