Beef Stir Fry....

I wanted to try something different so I mixed 2 recipes together tonight & I think it paid off pretty well....

Mix of Chicken Bok Chow & Southwest Pot roast together:
1 Pkg of pre-cooked pot roast in juices
2 cups of chopped Bok chow
1/2 pkg of broccoli slaw
1 cup chopped zucchini
1/4 cup of chopped onion
2 tbs of olive oil
1 tbs peanut oil
3 tbs soy sauce
1 bag of boil in the bag white rice

Simmer 1/4 cup of water and bok chow on med-high heat for 3-4 mins covered. Then add olive oil, broc. slaw, zucchini, onion and saute till veggies are tender. Finally add meat with peanut oil and soy sauce... toss until mixed and warm.
(while mixing boil water and cook rice for 10 mins)Serve over rice with soy sauce.

Hubby rating: 6 (He did NOT like the Bok Chow..I LOVED it!)
