Ash Wednesday & falling off the wagon....

Morning all.... the 30 degree weather in MN has not only gave us all hope for spring some day soon...but has brought some much needed exerise to Heidee & our family!

All week we have been battling (I know a little dramatic) through the 5 day challenge... well after 3 days of rice/beans/oatmeal... we have fallen off the wagon. There are many reasons... weak stomach of the hubby and my total lack of energy and us BOTH being on edged.. so last night after attending an amazing and touching service @ church (Amazing Grace always gets me, love you Grandma & Pearlie) we both decided to have a quite dinner together. What have to learned from this experience:
- We can give and sacrifice more to those in need, may that be money or time.
- We are going to remain living an conservative life that centers around God, each other and our families!
I will continue not drinking coffee and made black bean soup that I will be eating for lunch & dinner the next two days! Lets call it the modified plan :)

Speaking of exercise earlier, many give up something for Lent... the Hubby and I have chosen to give up bad health and work out ALL 40 days! Wish us luck.

Now back to cooking...
My Morning Loaded Omelet:
2 Tb olive oil
1 cup fresh broccoli
1/2 cooked chicken
1/2 cup drained diced tomatoes
2 eggs
2 Tbs milk
2 Tbs Parmesan cheese

Warm olive oil on medium heat, toss in broccoli and cook till tender. Add chicken and tomatoes. While cooking combine eggs and milk, whisk till blended and pour over mixture in skillet. Flip when firm and top with parm. cheese.
