Now I know it's a little corny how excited I get about house items or new cooking utensils! But tonight I got to use my new silicone basting brush with the BBQ chicken I baked. Normally we would throw the chicken on the grill... but as you may know I live in the frozen tundra and it was 1 degree today!
So I mixed a summer fav with some deliciously easy tomato soup - enjoy!
BBQ basting mixture:
1 cup BBQ sauce
1/2 tsp minced garlic
2 tbs Worcestershire sauce
*bast over 2 boneless chicken breast and bake for 15 mins @ 350, bast again and continue cooking for 20 more mins. Let cool and cut into strips. Lay flour tortilla on plate, top with desired salad and veggies. Finally top with chicken and drizzle with plain BBQ sauce. (not the basting mixture)
Tomato-Tortellini Soup
2 14oz cans chicken or veg broth
(digging in the pantry & found none.4 chicken bollion cubes & 4 cups of water to save this meal)
1 9oz pkg frozen tortellini
1/2 8 oz block or tub of cream cheese
1 can tomato or tomato bisque soup
1/2 cup diced tomato's (optional)
Bring broth to boil in large pot. Add tortellini, reduce heat and simmer uncovered for 5 mins. Meanwhile in bowl whisk 1/3 cup hot broth into cream cheese until smooth. Finally return all to pot, add soup and heat through. Spoon into bowls and over with chives and Parmesan cheese is desired.
