Sleepy but still cooking....

Hey everyone! Hope you are all having a wonderful holiday... life is good in Minnie. I have had some great get togethers with friends.... my store is SO busy, I think we might sell the place out.... and I'm really looking forward to a 1/2 day of work Thurs & Friday off with my family! I will be hosting Christmas Eve for the 4th time this year... I LOVE being the hostess!

So today I went out shopping before work and got all of my dinner supplies.... over the next 3 days I'm going to give you some recipes to bring you through snack/appetizer time, dinner and desert. And all that I will be making this Christmas......Enjoy!

Snacks-
1. Seasoned Pretzels:
1 bottle of popcorn oil
1 pkg ranch dressing mix
2 tbs lemon pepper
3 bags of pretzel twists
Mix all together and stir every 15 mins for 1 hour... best if made and then left over night.

2. Cowboy Caviar
1 can sweet corn, drained
1 can pinto beans, drained
1 can black beans, drained and rinsed
1 can great northern beans, drained and rinsed
1/2 cup green pepper, chopped fine
1/2 cup red pepper, chopped fine
1 cup celery, chopped fine
1 small purple onion, chopped fine
Marinade:
3/4 cup vinegar
3/4 cup vegetable oil
1 cup sugar
1/2 tsp. pepper
Mix marinade ingredients and boil until sugar is dissolved, cool completely
When cooled, pour over veggies and beans and mix. Best to let it sit in the fridge for a few hours before serving, then pour off about half of the marinade. Great served with Fritos Scoops (Alicia Sundsmo)

3. Reuben Dip

1 large pkg corn beef

1 can of sauerkraut

1 7oz block of cream cheese

2 cups of Swiss cheese

Put all into a crock pot on high for 20 mins. Stir and till mixed and cheese is melted. Turn crock to low and serve. Spoon onto rye cracker or mini sliced rye loaf of bread.
