Cold is here and the 20 degree weather is making it finally feel like winter. The 4 xmas trees are up (yea 4 Im not kidding ha ha) and lights are on the house. I LOVE Christmas and all the joy it brings. In 2009 I am trying to cut back, save $$$, give to good causes & limit on the stress (not easy to say when you work retail).... here is an easy recipe for a warm dinner!
French Onion Soup:
2 tbs butter
2 cups of chopped thin onions
4 cups of beef broth
2 tbs dry sherry or dry white wine (optional, I didn't use)
1 tea Worcestershire sauce
dash of blk pepper
4 Slices french bread, toasted
4 sliced Swiss cheese
Melt butter in pot on med-high heat. When melted add onions, cook and cover for 8-10 mins until golden brown. Stir in broth, sherry , Worcestershire sauce and pepper. Bring to boil, reduce heat and simmer for 10 mins.
Meanwhile toast bread, spread on butter and garlic if desired.
Heat broiler to high heat. Spoon soup into oven safe ramekins or bowls. Top with slice of french bread and the slice of cheese. Broil till cheese is melted and bubbly. Let cool for a couple mins and enjoy!!
I made this for the first time last night.. I served it with cooked asparagus tossed with butter and Parmesan cheese. I was surprised how much it tasted like restaurant prepared.
Hubby rating: 6.. he is not a fan of onion (I thought 9)
