Italian Bean Soup

A gal @ work gave me this recipe... I LOVE swapping recipes! I made it today for lunch and it was amazing... AC wasn't as big of a fan as I had hoped.

2 medium celery stalks
2 medium carrots
1 med onion
1 med zucchini
1 can canellini beans (drain, rinse and mash with fork)
1 T olive oil
1/4 tsp basil
1/4 tsp pepper
1 14oz can stewed tomatoes
1 can chicken broth
1/2 cups fresh spinach- chopped
1/2 cup chopped kale
(optional cubed ham, 1/4 lb)

-Dice celery, carrots, onion and zucchini. In soup pot saute in olive oil till tender. Season with basil and pepper. (About 15 mins med heat)
-Stir in tomatoes, chicken broth, 2 cups water, spinach, kale and beans.
-Heat till boiling, reduce to low and simmer for 15 mins.
Garnish with Parmesan cheese and serve with break or grilled cheese sandwich!
