February 1st.... snow & a hotdish:
Hey there! Well, in MN we are getting a blanket of the white stuff... I never listen to the weather (when is it ever reliable??) so I was surprised when snow came in today! Here is an not so happy look of Heidee outside in the snow.... she isnt a fan of the cold.
Either way after a about an hour drive home (usually 1/2 hour) I came home to cook a MN traditional hotdish:
Tator tot hotdish
1 can of cream of mushroom soup
1 small can of corn
1 lb of ground beef or turkey
1/4 cup chopped onion
the tots (about 1/2 large bag)
Brown meat. Combine soup, drained corn, beef and onion in a oven safe dish. Top with tots and season with salt and pepper. Cook @ 350 for 1 hour. (*alittle extra- for the last couple mins top with cheese and melt)
