After over a 12 hour day getting my store cleaned out and locked up... I was planning on making this for dinner, but that didn't happen. Either way I thought I would share and maybe make it 2morrow night:
All-American Meat Loaf
2 eggs, lightly beaten
1/3 cup beef broth
1 Tbsp Worcestershire sauce
3 slices of sourdough bread, cubed (about 2 cups)
1/4 cup parm. cheese
2 Tbsp yellow mustard
4 cloves of garlic, minced
1/4 tsp crushed red pepper
1 lb ground sirloin (i used turkey)
1 lb ground beef chuck
1 med onion, chopped (I used 1/2)
1/2 cup ketchup
2 tbsp packed brown sugar
2 tsp cider vinegar
Preheat oven 350. In lrg bowl combine egg, broth, worcest. sauce and cubes of bread. Let stand for 15 mins. With fork, mash bread into small pieces. Stir in parm cheese, mustard, garlic, 1 tsp salt, 1/2 tsp black pepper, and crushed red pepper. Add meat and onion. Using hands mix and lightly pat into 9/5/3 in loaf pan.
Bake uncovered for 1 1/4 hours. For topping, in small bowl stir together ketchup, brown sugar and vinegar. Spoon on loaf and bake 15 mins more or until the thermometer reads 160.
Let stand for 10 mins and sprinkle with parsley and green onions.
Make 8-10 servings.
