Santa Fe Chicken Packets

Another Pinterest recipe find... The weather is hot and summer is here! So getting the hubby to fire up the grill sounds great! I've been pinning tons of grilling recipes for the next couple months and bring home helps me to have time for new recipes! So enjoy...

3 chicken breast
1 small can or 1 cup frozen corn
1 small can zesty or Mexican style tomatoes, drained
1 can blk beans, rinsed and drained
Handful cilantro, chopped
1/4 cup olive oil
1 lime, juiced
Taco or grilling seasoning

Lay out 3 about 10x12 size sheets of aluminum foil. Coat area with cooking spray or olive oil and lay chicken breast on each. In med. bowl conbime corn, tomatoes, lime juice, beams, olive oil and cilantro. Mix and spoon evenly on top and around each chicken. Finally top with seasoning and lime slices (optional). Fold in packets with enough space for juices to steam. Throw in grill and cook for 25-30 mins till center of chicken isn't pink.
* I added the lime, seasoning and olive oil from the original recipe. The other recipe called for cumin but I don't like the taste of that and never cook with it. This was a good new twist to chicken on the grill. I would Marinade the chicken with olive oil, lime juice and seasoning for a couple hours next time... But either way the hubby rating was 8!
