  1. Hey DW! I'm really getting into Crock-pot recipes lately, so I use the recipes from a slow cooker book my dad gave me for Christmas. Although it doesn't require a Crock-pot, I just tried one of my mom's favorite recipes today. If you're feeling a little adventurous, this fettuccine is a must!

    Spicy Black Bean Fettucine
*1/4 cup extra virgin olive oil
*4 boneless, skinless chicken breasts, cut up
    *1 Tbsp. chili powder
    *2 teas. ground cumin
    *1 Tbsp. minced garlic
*2-3 fresh jalapenos (I used two, and it was flavorful, but not too spicy.)
    *1 bunch green onions, chopped
*1 can (15 oz) black beans, drained and rinsed
*8 to 10 oz. feta cheese, crumbled (2-2 1/2 cups)
    *2 small roma tomatoes, diced
*1 lb. fettuccine pasta (cook while preparing sauce)
    *1/2 cup fresh, chopped cilantro

Heat olive oil in skillet over medium heat. Add chicken, chili powder, cumin, and garlic. Saute until cooked through, but not browned. Remove chicken and set aside. Return skillet to heat. Add jalapenos and green onions. Saute 3 to 4 minutes. Stir in beans. Heat about 3 minutes. Add feta and chicken, heat thoroughly. Remove from heat, and stir in tomatoes. Toss cooked fettuccine in skillet, and sprinkle with cilantro.

Bon Appetit and I miss you!
