A hotdish favorite for The Hubby

COLD weather in Minnie.....we will be having highs of 5-7 degrees for the next couple days! AC and I ventured to Grandma & Grandpa's house after sleeping in till 12pm. haha Maternity leave is treating us well I would say. The little guy is now sleeping almost 4 hour stretches during the night. Yeah!

This recipe was given to me when The Hubby and I moved in together. Its one of the most requested dinners in our house:
MIL's Chow Mien hotdish:
1 lb cooked ground beef
1/2 cup chopped celery
1/4 cup chopped onion
1 cup water
1 cup uncooked minute rice
1 can cream of mushroom soup (cream of chicken works too)
1 can chicken and rice soup
3-4 tbs soy sauce
small can of corn (optional)
small can of sliced mushrooms
(optional, the Hubby doesn't like so I leave out)
dash of salt and pepper

Cook ground beef and drain. Bring water, celery and onion to a boil for 5 mins. Combine all ingredients in a glass baking dish. Bake for 45min-1 hour @ 350. Serve on Chinese noodles.
