A made up meal.....
BBQ Chicken & vegetable fried rice......
1 lb (3-4 boneless chicken breasts)
1 cup of BBQ sauce
2 tbs soy sauce
*Combine marinate and chicken in bowl, cover and store in frig for at least 2 hours or over night. Grill and cut into slices.
Vegetable fried rice:
1 long grain boxed rice, cook as directed on box.
1/4 onion, chopped
1 green/1 red peppers, chopped
1 cup pea pods
1 1/2 cup carrots, chopped
1/4 BBQ sauce and 1/4 soy sauce mix
While cooking rice, in large sauce pan heat olive oil on med/high heat. Combine onion, peppers, pea pods and carrots. Cook until tender. Add rice, BBQ mixture and simmer till warm.
I have to be honest, I totally made this meal up... gotta get to the grocery store 2morrow so I made some boxed rice and stir fried up as many veggies as I could and The Hubby grilled the chicken... good team work!
