I know that if I leave my hubby to himself for dinner its either pizza or cereal for dinner... although this is the 3rd night working this week I still want to leave something yummy for his tummy ;)
Southwestern Pot Roast:
1 16oz store bought package of refrigerated cooked beef pot roast with juices.
2 tbs olive oil
1 1/2 cups of fresh sliced mushrooms
1 cup chopped red bell pepper
1 cup chopped green bell pepper
3 green onions
1 cup salsa (picante sauce)
Chop veggies.
In large skillet warm olive oil on med/high heat; add mushrooms, onion, peppers. Simmer till veggies are tender. Mix in salsa till veggies are covered. Next add pot roast and juices. Reduce heat to med/low & simmer, covered, for 10 mins.
Serve immediately or put onto crock pot on warming. Can be served with white/wheat rice or couscous.
*How to prepare Couscous: In med saucepan bring 1 cup chicken broth to boil. Stir in 1 cup of quick-cook couscous, cover and remove from heat. Let stand for 5 mins. Add dash of pepper, salt and cilantro for flavor.
